Carrot Cake

Last weekend was relaxing after so many busy weekends. No rush rush. Visited a friend on lunch who recently had a baby. Her mother is visiting her now. Had a really good lunch with them. Simple food which reminds me of the food made by my mother. No matter how many tricks or methods we use to cook, food cooked by our mothers will always be the best.

Finally I got some time yesterday to bake. Made this carrot cake. This cake never goes out of fashion. Tastes best with cream cheese frosting, but I didn’t had the cream cheese at home. But I will surly post the frosting recipe some other time.

Preparation time: 10  minutes
Baking time: 35 minutes

Ingredients

  • All purpose flour: 2 cups
  • Cinnamon powder: 3 teaspoon
  • Baking Powder: 2 teaspoon
  • Baking Soda: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Eggs: 4 large
  • Sugar: 1 1/2 cup
  • Oil: 1 cup (Vegetable oil or any flavorless oil)
  • Vanilla Extract: 2 teaspoon
  • Grated carrot: 3 cups

Preparation

  1. Preheat the oven to 180 degree Celsius.
  2. In a bowl shift together the flour, cinnamon powder, salt, baking powder and baking soda.
  3. Take another bowl and beat the eggs till fluppy. You can use an electic mixer or do it by hand.
  4. Add the sugar and beat well again. Follow with the oil.
  5. Add in the vanilla extract and mix well.
  6. Now add the dry ingredients mix to this mixture, little at a time. Mix on low speed.
  7. Then add the grated carrots and mix using a spatula.
  8. Grease a cake pan and pour in the cake mix.
  9. Drop the cake pan 2-3 times on the table to break any air bubble.
  10. Bake for about 35 minutes. Check to see if the cake is ready by inserting a cake tester or toothpick into one of the cake. If it comes out dry then it is done. If not, then back in the oven for a few minutes more. Remove the cake and leave to cool on a wire rack.

  • no butter carrot cake – wonderful. My husband believes that carrots taste best as juice and nothing else. I should try this once and see if it will change his mind :)
