Christmas Strawberry Cake

Christmas is incomplete without cake and red is the color of Christmas. So this cake with strawberry is just perfect for the occasion. This was my Christmas cake for the year 2010.
Preparation time:  1 hr 10 minutes

Ingredient

  • Flour: 1 ½ cup
  • Sugar: 1 cup
  • Butter: 2 tablespoon
  • Milk: 2 tablespoon
  • Egg: 6

For Toppings

  • Whipping cream: 2 ½ cup
  • Sugar: 4 1/2 tablespoon
  • Strawberries: 15

Preparation

  1. Preheat the oven to 160°C.
  2. Take a bowl and mix  together the whipping cream and sugar and keep it in the freeze for about 30 minutes.
  3. Take the butter and milk in a small bowl and warm it up a bit to melt the butter.
  4. Put some water in a flat vessel and heat it up.
  5. Using an electric whisk beat the egg and sugar in a bowl.  Keep the bowl in the water vessel while beating the egg. Do this for 3-4 minutes. Then remove from water and beat on high speed for another 3-4 minutes till you reach the soft peak stage.
  6. Note: Soft peak stage is when the mixer forms a whipping pattern and when pulled up falls slowly and doesn’t leave the ends.
  7. Add the flour to it and fold gently from bottom to top using a spatula.
  8. Add the butter and milk and continue to fold till mixed well.
  9. Grease two cake pans and divide the cake mix in both.
  10. Drop the cake pan 2-3 times on the table to break any air bubble.
  11. Bake for about 20-25 minutes. Check to see if the cakes are ready by inserting a cake tester or toothpick  into one of the cake. If it comes out dry then the cakes are done. If not, then back in the oven for a few minutes more. Remove the cake and leave to cool on a wire rack.
  12. Now bring the whipping cream mixture from the fridge and beat the mixture until stiff peaks form.
  13. Cut 7-8 strawberries lengthwise.
  14. Take the first cake add one layer of whipping cream, then the cut strawberries and then another layer of whipping cream.
  15. Put the other cake on top of it and cover with whipping cream from all sides using a spatula.
  16. Fill it in a pipping bag with the whipping cream and decorate the top as desired. Put the rest of the strawberries on top.
