Mint Lemonade
This recipe is from the book Eva’s kitchen by Eva Longoria. I am a big fan of her, for her role as Gabrielle Solis in Desperate Housewives. This book mainly highlights Mexican style cooking with a touch of international cuisines also. The recipes are refreshingly simple and easy to follow. This is the first recipe from the book that I have tried but I have marked a couple more recipes which I am gonna try soon.

Preparation time: 5 minutes
Cooking time: 10 minutes
Ingredients
- Sugar: 1/2 cup
- Hot water: 1/4 cup
- Cold water: 2 1/2 cup
- Fresh lemon juice: 1/2 cup
- Ice cubes: 3 1/2 cup
- Sprigs of fresh mint: 6-7
- Fresh mint sprig to garnish
Preparation
- Place the hot water and sugar in a container and mix until the sugar is dissolved.
- Add the lemon juice and 2 1/2 cup cold water to it and mix well again.
- Take a blender. Place the ice cubes, lemonade and mint leaves and puree till well blended.
- Pour into serving glasses and garnish with fresh mint sprig.
