Bitter Melon/Karela Stir Fry

Well some don’t like the bitter taste of Karela and for some its one of their favourite vegetable and for some its part of their everyday lunch. Whether you like it or not but you can not deny the nutritious facts of bitter melon and how good its for stomach and skin. So here is a very simple karela stir fry mostly prepared in Odia kitchen.

Preparation time: 5 minutes
Cooking time: 12 minutes

Ingredients

  • Karela/Bitter melon: one medium
  • Onion: 1 small
  • Dried red chili: 2
  • Oil: 2 teaspoon
  • Turmeric powder: 1/2 teaspoon
  • Panch Phutana: 1/2 teaspoon
  • Chili powder: a pinch
  • Garam masala: 1/2 teaspoon (optional)
  • Salt to taste

Preparation

  1. Wash and cut the Karela into small pieces. Chop the onion lengthwise.
  2. Heat oil in a nonstick pan. When oil is hot enough add the panch phutana.
  3. After the seeds crackle, break and add the dried red chili followed by the onions.
  4. Stir for 10 seconds and then add the cut karela.
  5. Mix in the salt, turmeric and cook on high heat for 1 minutes, stirring in between.
  6. Lower the heat to medium low, cover and cook till done. Takes about 9-10 minutes.
  7. Serve with plain rice.
