Besan Bhujia (Sev)

Sev is a kind of savory snacks (namkeens ), used to top almost all chaats and perfect for tea-time snack.
It seems difficult to prepare but with the right tool you are just minutes away from making them.

Preparation time: 15 minutes

Ingredients

  • Gram flour: 1 cup
  • Rice flour: ¼ cup
  • Luke warm water: ½ cup
  • Chili powder: 1 teaspoon
  • Salt to taste
  • Oil to deep fry

Preparation

  1. Mix the dry ingredients first and then add the water little at a time.
  2. Prepare a stiff dough and make sure there is no lump.
  3. Heat the oil and fill the dough into a sev “press”.
  4. Hold the utensil over the hot oil and press out thin strands into the oil.
  5. As soon as noodles start falling into the oil, move the machine in a circular motion. This helps the sev not to stick together.
  6. Fry on both sides until crisp and lightly browned.
  7. Remove and drain on a paper towel.
  8. When its cool break into pieces by pressing in between your palm.
  9. Store  in an air tight container.
