Besan Bhujia (Sev)
Sev is a kind of savory snacks (namkeens ), used to top almost all chaats and perfect for tea-time snack.

Ingredients
- Gram flour: 1 cup
- Rice flour: ¼ cup
- Luke warm water: ½ cup
- Chili powder: 1 teaspoon
- Salt to taste
- Oil to deep fry
Preparation
- Mix the dry ingredients first and then add the water little at a time.
- Prepare a stiff dough and make sure there is no lump.
- Heat the oil and fill the dough into a sev “press”.
- Hold the utensil over the hot oil and press out thin strands into the oil.
- As soon as noodles start falling into the oil, move the machine in a circular motion. This helps the sev not to stick together.
- Fry on both sides until crisp and lightly browned.
- Remove and drain on a paper towel.
- When its cool break into pieces by pressing in between your palm.
- Store in an air tight container.
